Xavier Rousset
Xavier is Agnar's business partner at Texture and 28°-50°, and is passionate about wine. He has developed 28°-50° to be a comfortable and relaxing place to enjoy good food and wine. He is a master sommelier and has 30 ways to open a bottle of wine. -
Agnar Sverrisson
Agnar is Xavier's business partner at Texture and 28°-50°. He is from Iceland and met Xavier when they worked together at Le Manoir aux Quat' Saisons, where he was Head Chef. He is the Executive Chef at 28°-50°. -
Paul Walsh
Paul is our Head Chef and spent the previous 5 years working at Gordon Ramsay, Royal Hospital Road, where he was the sous chef to Clare Smyth. He has over 10 years’ experience of working at some of the country's finest restaurants. He also worked with Anton Edelman and then Marcus Wareing at the Savoy. -
Ed Newman
Ed is the manager of 28°-50°. He first met Xavier when they worked at the Hotel du Vins in 2001. He was also the floor manager and beverage manager during the opening of Shoreditch House and then was the manager at High Road House in Chiswick.
