Agnar SverrissonCHEF PATRON/ OWNER
Aggi is the chef patron and owner of the Texture restaurant group. He trained in his native Iceland, before joining Raymond Blanc at Le Manoir aux Quat'Saisons. In September 2007, Agnar launched his first venture, Texture Restaurant & Champagne bar. The second restaurant in the group that marked further expansion was 28°-50° Fetter Lane that opened in 2010. It has been so successful that a second 28°-50° Marylebone Lane restaurant opened in June 2012, followed by 28°-50° Maddox Street in 2013.
Clement Robert MSFood and Beverage Director
Clement has impressive credentials and years of experience to offer to our patrons. He was awarded International Young Sommelier of the year in 2010, UK Sommelier of the Year in 2013 and has qualified as a Master Sommelier in 2015. Some of his previous appointments include working under Eric Zwiebel at Summer Lodge Hotel, Sommelier at the Hotel du Vin group, and the Head Sommelier at Medlar restaurant.
Chiara OrselliGroup restaurant support manager
Chiara started with us in November 2014, and since then she has quickly risen up the ranks to her position of Group restaurant support manager. Originally from Italy, Chiara is a dynamic and highly driven individual with a passion for the industry and service.

Olga IvanchevaRestaurant Manager
Having moved from Bulgaria in 2007, Olga has worked at the Leeds Kitchen by James Martin and D&D’s Angelica and Crafthouse. She joined 28°-50° Maddox Street in the summer of 2015 as Restaurant Manager. Her wealth of experience helps her to maintain and run an exceptionally friendly service.
Tarja SilvaniHead Chef
Tarja learnt her craft working at various kitchens in Finland including ’Copas y Tapas’ and ‘restaurant Meche.’ She relocated to London in 2014 joining the Gordon Ramsay Group where she worked as Senior Sous Chef at the openings for Heddon Street Kitchen and Maze Grill Park Walk. She joined 28°-50° in January 2016 and was promoted to the role of Head Chef at Maddox Street within a year.

Simon BonifaceRestaurant Manager
Hailing from Cognac in France, Simon moved to London in 2016 to join 28°-50° as a sommelier. Bringing years of experience managing restaurants and 5-star hotels in Cognac region, Simon quickly rose through the ranks at 28°-50°, taking on the role of Restaurant Manager in 2018. Simon is passionate about delivering exciting and innovating dishes and wines, alongside exceptional service.
Julien BarisHead Chef
Having grown up in the world-renowned Bordeaux region of France, Julien’s love of premium cuisine and world-class wines was instilled from a young age. After honing his craft in the kitchens of a number of Michelin-starred restaurants in France, Julien moved to London to work as Head Chef at Aubaine, before joining 28°-50° in 2014. Now Head Chef, Julien leads a skilled team of talented chefs to deliver delicious, seasonally-led Modern European dishes.
