Agnar SverrissonCHEF PATRON/ OWNER
Aggi is the chef patron and owner of the Texture restaurant group. He trained in his native Iceland, before joining Raymond Blanc at Le Manoir aux Quat'Saisons. In September 2007, Agnar launched his first venture, Texture Restaurant & Champagne bar. The second restaurant in the group that marked further expansion was 28°-50° Fetter Lane that opened in 2010. It has been so successful that a second 28°-50° Marylebone Lane restaurant opened in June 2012, followed by 28°-50° Maddox Street in 2013.
Sid Clark28°-50° Group Operations Director
Sid has been working in some of London’s most exciting venues for the last ten years, having previously worked at Chelsea Football Club and the O2 arena in Greenwich. He joins 28°-50° from ‘Maze by Gordon Ramsay’ where he worked in the position of General Manager for five years. Sid’s role encompasses the management and development of all aspects of the business.
Justin LeclairExecutive Chef at 28°-50° Wine Workshop & Kitchen
Justin has been an integral member of 28°-50° restaurants. He relocated from the United States to London in 2012, and he joined Texture as a Sous Chef before he was promoted to Head Chef at 28°-50° Maddox Street in 2013. He became the Group Executive Chef in 2016, and he currently heads up kitchens at 28°-50° Maddox Street and 28°-50° Marylebone Lane. He holds a bachelor’s degree from the Culinary Institute of America.
Clement Robert MS28°-50° Group Head Sommelier/Buyer
Clement has impressive credentials and years of experience to offer to our patrons. He was awarded International Young Sommelier of the year in 2010, UK Sommelier of the Year in 2013 and has qualified as a Master Sommelier in 2015. Some of his previous appointments include working under Eric Zwiebel at Summer Lodge Hotel, Sommelier at the Hotel du Vin group, and the Head Sommelier at Medlar restaurant.
Chiara OrselliGroup restaurant support manager
Chiara started with us in November 2014, and since then she has quickly risen up the ranks to her position of Group restaurant support manager. Originally from Italy, Chiara is a dynamic and highly driven individual with a passion for the industry and service.

Virve StickRestaurant Manager
Virve comes from Finland and she began her career at 28°-50° Fetter Lane as a supervisor in 2012. Since then she quickly progressed into the Restaurant Manager position. With an amazing attention to detail and passion for service she also takes great pride in developing our front of house team.
Julien BarisHead Chef
Julien moved to London from France in 2004 where he worked in a number of well-known restaurants including Michelin starred Le Moulin de l’abbaye. He joined 28°-50° Fetter Lane as head chef in 2014. With a passion for locally-sourced produce, Julien constantly strives to ensure all guests enjoy a memorable dining experience.

Olga IvanchevaRestaurant Manager
Having moved from Bulgaria in 2007, Olga has worked at the Leeds Kitchen by James Martin and D&D’s Angelica and Crafthouse. She joined 28°-50° Maddox Street in the summer of 2015 as Restaurant Manager. Her wealth of experience helps her to maintain and run an exceptionally friendly service.
Tarja SilvaniHead Chef
Tarja learnt her craft working at various kitchens in Finland including ’Copas y Tapas’ and ‘restaurant Meche.’ She relocated to London in 2014 joining the Gordon Ramsay Group where she worked as Senior Sous Chef at the openings for Heddon Street Kitchen and Maze Grill Park Walk. She joined 28°-50° in January 2016 and was promoted to the role of Head Chef at Maddox Street within a year.

Benjamin BarnesRestaurant Manager
Originally from Ireland but born and raised in Spain, where he developed a passion for the restaurant industry, Benjamin moved to London in 2010. Before joining our team, Benjamin worked for a number of well-known London restaurants including Compotoir Gascon, Cigalon and Royal Exchange Grand Café. With eight years of experience in hospitality, Benjamin is a dedicated and passionate about service.
Alex DraytonHead Chef
Alex has been with 28-50 Marylebone for two years and has already created quite a buzz with his impressive cooking. Alex worked his way through the ranks in many of the highly regarded restaurants in the UK, Australia and Spain. With plenty of culinary experiences gained from his travels, he joined our team as a Junior Sous Chef and progressed quickly to his current role as Head Chef.
